Store in an airtight container at room temperature for up to two days.

These are the famous colorful cookies that you will see all over France, where they are known as macarons. I have designed this recipe to make three different macaroons: vanilla, cinnamon, and a pretty pink raspberry version. You can mix and match these macaroons with three fillings—vanilla or cinnamon buttercream, or raspberry jam—or with a decadent chocolate ganache filling. On occasion, I have filled the vanilla macaroons with Caramel Filling (page 216).
